What is the word for when jobs require more out of the employee?

As in, say, McDonald's requiring a Master's degree in Culinary Arts or Barnes and Noble requiring a Ph. D in Philosophy.

I have an essay to write and i know we learned a word in Econ for it.
Added (1). EDIT: I'm not talking about requirements and qualifications in general.

I'm talking about the trend of employers start asking a lot more than "normal"/usual.

Its not overqualification, its more like overqualification becoming the standard. I need the word for that trend.
