The Middle English of the Canterbury Tales?

I have a Barnes and Noble Classics Edition of it with side by side pages with Middle English to the left and Modern English to the right, but I'dl like to take up the challenge of at least attempting the Middle English, because as it said in the introduction, there is a possibility that something could be lost in the Modern English translation. How is Middle English read (how drastic are the changes in vowel sounds, for instance, is 'veyne' actually 'vine'?), and would it be appropriate to hear it read than trying to straight read it?
